MADE WITH LOVE MIXOLOGIST COMPETITION IN YYC

Tait with a huge grin, pours his Twisted Village: a combination of cardamon ice cream, Hendricks gin, and orange and juniper bitters.  This could be a dessert, luscious creamy and floral. Tait also served up delightful white chocolates filled with chocolate popping candy


 Emily Butt (Notable) infuses cherry and mesquite smoke, with an apple spice shrub, maple syrup lollipop and bitters.  A nice blend using spice.

 Just back from Louisiana for another cocktail competition, Franz Swinton (Cube) as energetic as ever prepares a combination of Hendricks Gin, cucumber water and sparkling wine.

Jimmy Nguyen (Cube) adds liquid nitrogen, adding a touch of drama, and has guests oohing and aahing, and who doesn't love cotton candy?

was a perfectly balanced blend of bitter, spice and sweet.

Head's A Touch of Northern Hospitality, the subtlety of the earl grey tea infused beer, lemon juice and bitters
was very unique.

Davis' Skyy snowcone, (available in Coconut or ginger), a blend of Skyy vodka, lime juice, and jasmine or red pepper syrup.


Timo Salimaki (National) lightly bruises his shiso leaves to garnish his Skyy vodka cocktail.  "Blueberry and basil are a match made in heaven, and shiso has a  basil- like quality", adds Salimaki.

After the qualifiers in May at Mango Shiva (see CSL's post here) , twelve competitors were selected to compete in the main event on Monday, July 30th on a hot and steamy day.  The packed to the brim Art Gallery of Calgary was the backdrop as the twelve finalists went head-to-head, each creating an original cocktail for guests to sample, savour and decide their vote. On each level of the gallery, guests chatted and sipped the unique creations.

For the Public's Choice, ticket holders were given twelve exclusive tastings of each libation, and signature silver 'Made with Love' dogtags to vote for their favourite. (It made it easy to spot the winner festooned in silver chains rapper style). 

The Judge's Choice winner was decided by the panel of judges, and based on originality, presentation and taste.

Each winner receives an all-expense-paid, three-day trip to Montreal, where they will showcase their talent, and an all-new drink at MadeWithLove™ Montreal edition to be held in December 2012.

SUMMER BARBECUING WITH BIC AND CHEF ROB ROSSI






Nothing says “summer” like a BBQ with family and friends! There's just one little rub - the hassle of charcoal. Check out some recipes that Chef Rossi created with the BIC™ FlameDisk® in mind:

Smoky Spanish Style Steak Marinade
1 tbsp sweet smoked paprika
1 clove garlic, minced
1 tsp ground black pepper
½ tsp ground cumin
1 tbsp kosher salt
1 tbsp fresh thyme
1 ounce olive oil
½ lemon, juiced

1. Measure out all dry ingredients and place into a medium sized bowl.
2. Using a chef’s knife, chop garlic until minced fine. Add garlic to dry ingredients.
3. Juice lemon into bowl.
4. Pick thyme off stems, chop roughly.
5. To finish marinade drizzle olive oil into dry ingredients while combing with a whisk.
6. Once marinade is done place meat into a bowl and coat the meat generously. Cover with plastic wrap and refrigerate for up to 2 days.

Serves two

Grilled Sweet Peppers
3 sweet red peppers
2 tbsp sherry vinegar
1 tbsp fresh basil, chopped
1 tbsp extra virgin olive oil
1 tbsp maple syrup
salt and pepper to taste

1. Place sweet peppers onto grill grate over BIC™ FlameDisk®; cook until blistered and soft.
2. Set peppers aside to cool. Once cool, peel and seed peppers by removing stem and skins.
3. Place peppers into medium sized bowl and combine with sherry vinegar, extra virgin olive oil and maple syrup.
4. Season with salt and pepper.
5. Finish with chopped basil.

Serves two

ROUGE AND WHITE CARNIVAL AT ROUGE CALGARY

Super talented Chef Derrick Dammann (DNA Montreal) plates his pork belly and pickled watermelon salad. 


A closeup of Chef Dammann's dish.  This was one of CSL's favrourite dish of the evening, light, spicy, herbaceous, refreshing.  Summer personified.  Another highlight?  Rouge's own sauteed sweetbreads and carrot slaw, with mint.

A lively carnival atmosphere pervaded in Rouge Calgary's garden.  Chef Paul Rogalski played host to a "Rouge and White" event, which included a fortune teller, 'hula hooper', and magician/ stilt walker.

Intended to raise awareness for the Hotchkiss Brain Institute, showing support and bringing together people who have been affected by brain related illnesses or injuries, the lively party featured several local chefs including Chefs Connie DeSousa and John Jackson from Charcut, Chef de Cuisine JP Pedhirney, Chef Michael Allemeier, Chef Xavier Lacaze, and Chef Derrick Dammann.

FIELD LAW KICKOFF TO THE CALGARY STAMPEDE AT THE RANCHMEN'S CLUB

The Field Law kickoff to Stampede party drew a huge crowd, who swayed to the sounds of Jim Cuddy, and munched on Stampede favourites. Bales of hay, cowboy hats and a wooden fence decorated the grounds of the Ranchmen's Club where the celebration was held. In anticipation of the Centennial Stampede, the Field Law party was the place to get in the Stampede mood. Yahoo!
