BOOKERS BBQ AND CRAB SHACK LAUNCHES NEW MENU

Bookers BBQ and Crab Shack served up a new menu inspired by a trip to Nashville, TN. 
Chef Myles Learning, Owners Lance Hurtubise and Gerry Forbes and team were all on hand to inaugurate a the latest offering from the restaurant which specializes in authentic Southern food.

OCEAN WISE MAKES A SPLASH IN CALGARY

A few days of festivities took place in Calgary to celebrate the growth of their Ocean Wise partners in Alberta.  Flying fish, culinary chef demonstrations and, a secret dinner took place in our city. 

CSL was invited to this dine around, featuring local chefs creations and their commitment to sustainability of fish stocks.


First, guests dined at The Fairmont Palliser, for a classic Ocean Wise salmon tartare, from Executive Chef Paul Peddle


 A short distance away at Redwater Rustic Grill, corporate chef at Vintage Group Andrew Stevens  treated guests to a salt crusted Ocean Wise Arctic char


A closer look at Executive Chef Stevens dish, served with fiddleheads, asparagus and peas


 The beautiful dish, created by Executive Chef Dustin Schafer of Sky 360Restaurant and Lounge featured seared Ocean Wise striped bass, pickled vegetables and a risotto cake.
 

The final stop was at Catch, where Executive Chef Kyle Groves created a dish of Ocean Wise B.C halibut and spot prawn with morel, English peas and chorizo ragout


Finally for dessert, a trio of Valrhona chocolate

Dish: Chocolate Cremaux, toasted meringue, sweet potato sorbet, lemon gel, and corriander chocolate soil (from Pastry Chef Dylan Nosal)

A celebratory dinner was held on a chilly Monday evening to introduce the new vision and new players at Muse restaurant in Calgary. A thoughtful, considered menu was presented by the hosts; a Spring offering, hinting at the rebirth of both the restaurant and the new season.

After working in the Caribbean for several years, the opportunity to come back to Calgary lured Proprietor Stephan Deere who purchased Muse with Heather Wighton in 2012."This is the best kitchen in the world, the guys are skilled, creative and truly love their job.  I have trouble trying to send them home some days," Deere joked, adding that the focus at Muse will be on unpretentious, approachable food.
Executive Chef  JP Pedhirney chimed in noting that his first experience at Muse was with then Executive Chef Cam Dobranski at the helm. "That was my first experience with a tasting menu, and I was in awe.  I want to follow in his footsteps, with my own twist.  [I want the food to be ] playful, ingredient focused, with new textures and flavours.  It's my intention to carry on the tradition of outstanding food."
Wine was expertly paired by Andrew and Mark from Bonvida Wines, reaching a crescendo with the
Brigaldara, a truly special Valpolicella with notes of spice, vanilla and ripe fruit paired with the rich dark chocolate dessert.
With a promise of being: "different, distinct, incomparable, individual and unequaled," we think that the gracious and hospitable crew at Muse will continue with great success.

After 26 years as a cornerstone of the Kensington community, Osteria de Medici, the Italian restaurant modernizes interior and re-launches brand as the de medici trattoria & wine bar.
Osteria de Medici’s Grand Re-opening Red Carpet Launch garnered a large crowd, who nibbled on hors d'oeuvres while sipping prosecco and spirits and the newly styled bar.

For the first time in 19 years Earls Kitchen and Bar opened a new restaurant in Calgary at Shepard Flats.  Earls is a Calgary institution and the restaurant chain celebrated the occasion with Cameron Bogue's handcrafted cocktails (the old fashioned was particularly nice), craft beers, CedarCreek Estate wine and of course small nibbles from the kitchen.

Guests were impressed by the custom lighting, retro tufted leather booths and up-close views of chefs preparing their dishes.

MARKET RESTAURANT OPENS ON CALGARY'S 17TH AVENUE

What do a cow, two forks, a maple leaf and two sheaths of wheat have in common? They are the emblems of the newly opened Market restaurant on 17th Avenue in Calgary.  During a grand opening ceremony chefs, owners, managers, bartenders and staff mingled with guests. The crew at Market includes: Vanessa Salopek
(owner), Geoff Rogers (Executive Chef), David Bohati (Chef de Cuisine) Yvan Toulouse (General Manager) and Mixologist Rebecca Davis.

"For MARKET, it’s a commitment, a choice, and a way of life. MARKET is founded on the principles of community, relationships and ethics, paying homage to Alberta’s heritage by drawing from the seasonal resources that are found regionally."

A showstopper piece of the restaurant is the herb growing Urban Cultivator, an internal home garden that garnered oohs and aahs from guests. Other unique features are the house-made rootbeer, stenciled artwork, and customized tablewares.
