TRYING A BETTER BURRITO BOWL

With temperatures rising just in time for Spring, people can't wait to head outdoors, including us.   The warmer weather also has us thinking about our many Mexican vacations, which always include delicious meals. Craving a taste of Mexico in Calgary, and looking for a lighter option for lunch, CSL recently visited  Quesada Burritos & Tacos

The location in southeast Calgary was opened seven months ago, and was bustling with the lunchtime crowd on a sunny Saturday afternoon.  While the menu offered an array of Mexican inspired dishes (think crisp tacos, burritos and salsa and chips), the burrito bowls caught our eye.  It's all the flavours we love in a burrito sans the tortilla (and minus the carbs)!

The burrito bowls are customizable, with choices of fresh ingredient toppings like red onion, corn, jalapeno, veggies, beans, rice,cheese, salsas and sauces- CSL opted for the spicy chicken and chile-lime fish burrito bowls.  Paired with a cold bottle of Mexican soft drinks (Jarritos), this was the taste of Mexico in Calgary we craved.

One of the signatures of great Mexican food, for us, is the roasted/ charred flavour you get in the sauces.  The staff were proud to share that the salsas and sauces are made from scratch, daily.  This means slow roasting tomatillos and peppers, slow cooking pinto and black beans, cooking rice with cilantro and lime juice and mashing avocados for guacamole, just like abuela (grandma).  CSL loved the fiery salsa roja- supremely spicy but super flavourful.

Our table looked like the colours of Mexico - red salsa, green guacamole and white cheese, and after eating our burrito bowls we were satisfied but did not feel heavy.  Hey, that's 'The Joy of Mex'!

HAPPY APPLE MONTH WITH BC TREE FRUITS


Did you know February is Apple month?  Celebrate with this recipe from BC Tree Fruit.

Apple & Sweet Potato Pot Pies

Ingredients:

2 large BC Tree Fruits apples, skin on (Granny Smith, Ambrosia or Royal Gala)

1 medium yam or sweet potato

2 tbsp corn starch

½ tsp dried sage leaves

½ tsp dried thyme

½ tsp dried oregano

2 tbsp melted butter

2 sliced green onions, whites and greens

¾ cup chicken or vegetable broth (gluten free if required)

1 beaten egg, for topping

Square of frozen puff pastry, tube of refrigerator crescent rolls or any biscuit dough


Directions:

1. Peel yams, core apples, and cut both into ½ inch cubes.

2. Toss with corn starch, spices, and melted butter.

3. Add sliced green onions and broth.

4. Pour into a sprayed casserole dish, top with sliced apples or pastry, and brush with egg wash.

Topping
5. For a gluten free topping, slice the third apple as thinly as possible and layer onto the pie.

6. For a quick traditional crust, top with choice of biscuit dough

7. Bake at 400 for 20 minutes, then reduce heat to 350 for 20 more minutes or until topping is golden.
