FALL 2012 CHEFS TABLE AT EARLS ON BARLOW TRAIL

A signature dish at the restaurant:. The Prawn Dynamite Roll mango, avacado, siracha mayonnaise served with wasabi and pickled ginger.  Chef Fedak relays thatto ward off evil spirits, ginger and water are 'clapped' into the air.


Chef Robyn Fedak, blowtorches the albacore tuna and "loves playing with food, I like to have a little drama."  Originally from Manitoba, the Chef worked at a local Asian restaurant before heading to Earls.

Albacore Tuna Sushi Salad avocado, mango, carrots and cucumber, brown basmati and sushi rice, toasted nori, organic greens, white miso vinaigrette, rare seared tuna.  Served with house made focaccia, and thai carrot soup.

Chicken and Field Mushroom Fettuccini parmesan cream sauce, wilted spinach, crimini, oyster and button mushrooms, herbed bread crumbs, grilled chicken.


The Californian Prawn Pesto: house made pesto, prawns, sundried tomatoes and mozzarella, white cheddar and feta, garlic butter, hand tossed thin crust.  Fresh and light.


What's more seasonal than a slice of pumpkin pie and glass of warm cappuccino?  "
